Beat together ¾ cup of strong bread flour (high gluten content), salt, 4 eggs, 1¼ cup of whole milk and 1 pinch of ground nutmeg to form a batter. Leave to rest for at least an hour.
Heat a nonstick Yorkshire pudding tray with a dollop of lard, and place in the oven at 400 °F until the fat is smoking.
Pour in the batter and cook for approximately 20-25 minutes until well risen. Serve immediately.
